A Ukrainian chef, armed with his country’s cuisine
When Russian troops invaded Ukraine last spring, Ukraine’s most renowned chef, Ievgen Kropotenko, closed his famous Kyiv restaurant, 100 Rokiv and reopened it to serve military canteen. He’s now back to serving customers and supporting his country’s national identity by promoting its native cuisines, including borsch. Holly Williams, correspondent, goes into the kitchen with Klopotenko to get a taste of Ukraine.
